USDA stands for the U.S Department of Agriculture. The grade shields are a mark of safe, high-quality meat. There are eight different grades in total: prime, choice, select, standard, commercial, utility, cutter, and canner. Prime refers to the highest quality and canner being the lowest.
Prime beef tends to have high intramuscular fat content, which is what gives it its flavour and tenderness. Levels of intramuscular fat reduce as you go further down the grades.
