Creekstone Farms raise their USDA certified Black Angus cattle with exceptional care, resulting in complete traceability from farm to fork. Each cow is hand-selected, and the combination of superior Black Angus genetics with meticulous management and high quality feed produces a finish like no other. The cattle are fed a rich corn based diet, which results in well-marbled, tender and simply delicious beef.

Grading:
The USDA grade shields are highly regarded as symbols of safe, high-quality American beef. Beef is evaluated by a highly-skilled USDA meat grader, the beef is graded in two ways: quality grades for tenderness, juiciness and flavour, and yield grades for the amount of usable lean meat on the carcass. Here at Tom Hixson we offer the two highest grades of USDA Beef: Prime and Choice.


Prime:
Prime beef is produced from young, well-fed cattle and features the highest amount of marbling. Prime roasts and steaks are excellent for broiling, roasting or grilling. This grade is found in restaurants, hotels and steakhouses.

Choice:
Choice beef is high quality, but has slightly less marbling than Prime. Choice roasts and steaks from the loin and rib will be very tender, juicy, and flavorful and are suited for dry heat cooking. This grade is found in restaurants, hotels and steakhouses.

 

The USDA brisket arrives fresh. For the best flavours and textures, we would advise using straight away. If you want to freeze your beef, defrost in a fridge 24 hours before use.
