Cut from the loin, the sirloin is prized for its balance of luxurious texture and beautiful structure, delivering a rich, buttery eating experience with every bite. While Kobe may be the most recognised name in Wagyu, regions such as Towada have earned worldwide respect for producing beef of truly outstanding quality through generations of careful breeding, meticulous feeding programmes and an uncompromising dedication to excellence. Awarded the highest possible grade, A5, this Wagyu meets the strictest standards for marbling, colour, texture and fat quality.
Intricate ribbons of marbling gently melt during cooking, creating unrivalled succulence and exceptional depth of flavour. Best prepared with a simple sear and served medium-rare, the sirloin rewards restraint, allowing the natural richness and delicate sweetness of the Wagyu to take centre stage.
