We’re pleased to announce our very own range of fine Wagyu beef in collaboration with our Irish farming partners, including a firm favourite, the Wagyu brisket. This brisket is a firm favourite for BBQs and al-fresco dining and is best when cooked low and slow all day long.

This exclusive selection of Wagyu brisket draws inspiration from the rich heritage and unparalleled flavour profile synonymous with the Wagyu breeds whilst also adding new distinctive flavours and textures. In the final three months of their lives, their diet is supplemented with chocolate, which adds a subtle, yet delicious sweetness to their meat. 

We decided upon a Wagyu/ Shorthorn cross, which has been reared stress-free on the open, grassy pastures of Ireland. Shorthorn are renowned for producing marbled beef, so when crossed with Wagyu the results are sublime. Each cut of Wagyu brisket offers some of the best marbling available on the market. When slow-cooked, this marbling renders deep into the tissue of the meat. This makes the brisket incredibly flavoursome'. Trust us, you won’t find a more tender brisket elsewhere!

Is Wagyu Good For Brisket?

Yes, without a doubt. Brisket is a cut already known for its high levels of fat, which makes the meat super juicy when cooked low and slow. But, combined with Wagyu, the fat marbling is made even better, resulting in a beef that instantly melts in your mouth. 

 

Do You Cook Wagyu Brisket Differently?

Cooking Wagyu brisket is slightly different to how you would a usual cut of brisket. Because of its higher levels of fat marbling, you’ll need to slightly reduce the temperature on your smoker or grill in order to get the brisket to melt in your mouth. 

Once marinated overnight, pop your wrapped brisket on the grill for around 12 hours, or until the thickest part of the cut reaches 95°C. Once cooked, rest your Wagyu brisket for anywhere from 1-3 hours to help the juices redistribute throughout the meat.

Our signature Wagyu beef brisket is sourced from the lower back or chest of the Wagyu / Shorthorn cross cows. The brisket consists of two distinct muscles, the point and the flat. The untrimmed or "packer" cut combines both sections of the brisket for the ideal levels of fat for maximum flavour.

Brisket, particularly wagyu brisket, is a popular choice amongst the BBQ smoker community, as the cut boasts a thick layer of fat that infuses the meat with an almost sweet, buttery, umami flavour. This allows the fat from the marbling to render through the meat creating an incredibly moist, tender, and flavourful piece of beef that is sure to be a hit at your next get-together.
