Sourced from the esteemed Rosendale herd in Ireland, this Wagyu Chateaubriand exemplifies the harmony of careful rearing and expert butchery. Raised on a grain-rich diet enhanced with chocolate, each animal develops exceptional marbling and flavour complexity. Cut from the head of the fillet, this is the thickest and most succulent section of the tenderloin - traditionally regarded as the pinnacle of tenderness and refinement.

Beautifully marbled and luxuriously soft in texture, the Rosendale Wagyu Chateaubriand offers a depth of flavour that is rich yet perfectly balanced. When roasted whole and carved at the table, it delivers a beautifully tender and buttery mouthfeel. For the finest results, sear to create a caramelised crust before finishing gently in the oven to medium-rare, allowing the marbling to melt and enrich every bite.
