View full detailsThis delightful Wagyu Roasting Joint is taken from the topside, a large cut from the hind quarter of the animal, between the rump and leg. The topside muscle, being both lean and quite tender, makes an excellent Wagyu beef roasting joint. A slow cook really helps the flavours develop within the meat.
In collaboration with our Irish farming partners, we have used our combined expertise and knowledge to produce the unique Tom Hixson wagyu beef. This exclusive Wagyu selection draws inspiration from the rich heritage and unparalleled flavour profile synonymous with the Wagyu breed while adding new distinctive attributes.
We decided upon a Wagyu / Shorthorn cross, which has been reared stress-free on the open, grassy pastures of Ireland. Shorthorn is renowned for producing marbled beef, so when crossed with Wagyu the results are sublime. The cattle’s diet is supplemented in their final three months with chocolate, which adds a touch of sweetness to the bite. This is all perfectly reflected in this beautiful Wagyu roasting joint.
