Sourced from the rolling pastures of Towada, this brisket comes from Japanese Wagyu cattle renowned for their exceptional lineage and meticulous care. Each animal is reared to preserve the natural integrity of the meat, resulting in a cut that carries the A5-quality marbling Wagyu is celebrated for. Its “5+” grading highlights an extraordinary balance of fat and muscle, offering richness without heaviness a cut built for slow, considered cooking and thoughtful enjoyment.
The brisket’s fine marbling gives it a supple texture and deep, nuanced flavour that develops further with slow roasting, braising, or low-and-slow smoking.
