Brisket – Japanese Wagyu, Towada (5+)

Sourced from the rolling pastures of Towada, this brisket comes from Japanese Wagyu cattle renowned for their exceptional lineage and meticulous care. Each animal is reared to preserve the natural integrity of the meat, resulting in a cut that carries the A5-quality marbling Wagyu is celebrated for. Its “5+” grading highlights an extraordinary balance of fat and muscle, offering richness without heaviness a cut built for slow, considered cooking and thoughtful enjoyment.

The brisket’s fine marbling gives it a supple texture and deep, nuanced flavour that develops further with slow roasting, braising, or low-and-slow smoking. As it cooks, the meat transforms, offering a silky mouthfeel and layers of umami that are uniquely Wagyu. Minimal seasoning is required; the natural depth of the beef speaks for itself, rewarding patience with a profoundly satisfying eating experience.

BRISKET
BRISKET

The brisket consists of two distinct muscles, the point and the flat. The untrimmed or "packer" cut combines both sections of the brisket for the ideal levels of fat for maximum flavour.

Brisket, particularly wagyu brisket, is a popular choice amongst the BBQ smoker community, as the cut boasts a thick layer of fat that infuses the meat with an almost sweet, buttery, umami flavour. This allows the fat from the marbling to render through the meat creating an incredibly moist, tender, and flavourful piece of beef that is sure to be a hit at your next get-together.
