French Trimmed Lamb Rack – Maimoa, New Zealand

This French trimmed lamb rack comes from Maimoa lamb, raised in New Zealand’s clean, open landscapes where pasture, climate, and careful farming work in quiet harmony. Maimoa is known for its consistency and balance, producing lamb that is naturally well-shaped and finely textured. Prepared with precision, the rack showcases the best of the loin, offering a cut that is both elegant and deeply rooted in traditional butchery.

The meat is tender and delicately flavoured, with a fine covering of fat that protects the rack during cooking and enhances its natural sweetness. LAMB RIBS

This is a section of eight ribs with the loin meat attached. Lamb loins are much smaller in diameter, but full of delicious and tender flavours. Lamb Ribs are often French Trimmed, which involves removing excess meat and fat from the bones to present an exquisite luxurious appearance on the plate. While the trimming is mainly for aesthetics, it doesn't affect the flavour or texture of the cooked result.
