Japanese A5 Wagyu sirloin from the Kagoshima prefecture is rare and incredibly sought-after. Winner of the prestigious Japanese ‘Wagyu Olympics’ in 2017 and 2022, Kagoshima Wagyu is unparalleled in quality and consistency, with a creamy marbling and butter-soft texture. Produced in the Kyushu island of Japan, the cattle boast a 70% A5 grading, a standard unique to Kagoshima. 

Origin: Japan

Breed: Wagyu Kagoshima

Weight: From 2.3kg to 3.2kg

Serves: 11 for the 2.3kg, 3.2kg serves 16 (based on a 200g portion)

Marbling Score: BMS 11

 

Grading

 A5- Yield grade (A to C) is the ratio of meat to the total carcass weight. Meat quality grade (1 to 5). The four criteria are: fat marbling, the brightness of the meat; texture, and the brightness of the fat.

BMS (beef marbling score) is a system used to grade the quality of beef based on the amount of intramuscular fat in the meat. It is graded from 1 to 12, with 12 being the highest grade. 

Our Japanese Wagyu sirloin is certified A5, the highest-quality possible, coupled with a BMS score of 11.

SIRLOIN
SIRLOIN

The Sirloin is cut from the hindquarter and the lower portion of the animal's ribs, sitting just above the fillet. It is leaner cut when compared to the Ribeye, but it’s still extremely tender and juicy. The Sirloin has a natural top fat covering that enhances succulence and releases intense flavours that are infused in the meat when cooked.
