We decided upon a Wagyu / Shorthorn cross, which has been reared stress-free on the open, grassy pastures of Ireland. Shorthorn are renowned themselves for producing marbled beef, so when crossed with Wagyu the results are sublime.
Their diet is supplemented in their final three months with chocolate, which adds a touch of sweetness to the bite.
To keep the Wagyu Bone in Shin of Beef soft, we’d recommend a slow cooking process, which also helps to create a wonderful depth of flavour. Serve with the bone in or out, depending on your preference.
The Wagyu Bone in Shin arrives to you fresh. For the best flavours and textures, we would advise using straight away. If you want to freeze your beef, defrost in a fridge 24 hours before use.
