Neck Fillets – Maimoa Lamb, New Zealand

Taken from the shoulder end of the lamb, these neck fillets come from Maimoa lamb raised across New Zealand’s open pasturelands. This is a cut shaped by movement, valued for its structure and depth, and made distinctive by careful rearing and consistent quality. The Neck fillet is a boneless cut and sits between the neck and the square-cut shoulder. As a well-used muscle, it contains a high amount of connective tissue. It is well-trimmed of any excess surface fat and recommends a low and slow cooking method for the best results. The Neck fillet is very tender and mild in flavour, lamb fillets are highly prized, finger-shaped pieces.
