Our Australian farming partners produce the finest premium Australian cattle found in the heart of the Northern Tablelands. The cattle are raised freely on pasture and finished to perfection with locally sourced Australian wholegrain cereals grown in the famous Golden Triangle. Wholegrain cereals and a rich grass feed are the key to developing beautifully marbled beef, enhancing the flavours, texture, and tenderness with each bite.

SIRLOIN
SIRLOIN

The Sirloin is cut from the hindquarter and the lower portion of the animal's ribs, sitting just above the fillet. It is leaner cut when compared to the Ribeye, but it’s still extremely tender and juicy. The Sirloin has a natural top fat covering that enhances succulence and releases intense flavours that are infused in the meat when cooked.
