Iberico pork comes from the Black Iberian Pig, which is native to Spain and some parts of Portugal. Secreto is a thin, wide, boneless pork cut with high levels of fat marbling throughout.
Secreto Iberico is cut from behind the shoulder and under the back fat layer on a pig. Neatly tucked away, this cut might be small, but the fat streaks offer an incredible depth of flavour.
We’d recommend frying your Iberico Secreto in a hot pan on the stovetop. Simply heat up a glug of neutral oil and add in your room temperature meat. If you like, you could season your pork with salt and pepper, before basting in butter. Cook for a minute or two on each side.
