Ingredients
Black Label Argentine Fillet (Rioplatense)
1 jar caramelised onions
3-4 tbsp wholegrain mustard
1-2 sheets puff pastry
2 packs Serrano ham
1 egg (for egg wash)

Caramelised Onion Mini Beef Wellington by Emma Wells

A simpler take on Beef Wellington, perfect for Mother’s Day or any special occasion! A gorgeous Argentine beef fillet from topped with store bought caramelised onions all wrapped up in serrano ham and crisp flaky pastry  

Serves: 3-5

 

Method

1. Prep the Beef: Season beef with salt & pepper, lightly oil, and sear all sides for 1 min in a hot pan. Let cool completely.

2. Caramelise the Onions: In the same pan, cook caramelised onions until sticky.

3. Assemble: Lay Serrano ham on cling film, spread onions in the center, and place beef on top. Coat beef with mustard, add a small piece of ham on top, then wrap tightly in cling film. Chill for 20 mins.

4. Wrap in Pastry: Roll out puff pastry slightly thinner and cut into strips. Place beef at one end, egg wash edges, fold over, and crimp to seal. Remove excess pastry. Chill for 1 hour.

5. Bake: Preheat oven to 200°C. Place on a hot baking tray and bake for 20-25 mins.

6. Rest & Serve: Let cool for 10 mins, then enjoy!
