Sourced from the renowned Towada Prefecture in northern Japan, this exceptional A5 Striploin is cut from the loin - prized for its balance of tenderness and structure. While Kobe may be the most recognised name in Japanese Wagyu, regions such as Towada are equally celebrated for producing beef of extraordinary quality, thanks to generations of careful breeding and a meticulous grain-fed diet. Awarded the highest possible grade, A5, this cut meets the strictest standards for marbling, colour, texture, and fat quality.

The Striploin is defined by its intricate marbling, which melts during cooking to create unrivalled succulence. Its flavour is rich, buttery, and refined, best enjoyed with simple searing and served medium-rare to showcase the natural opulence of the Wagyu.

The Sirloin is cut from the hindquarter and the lower portion of the animal's ribs, sitting just above the fillet. It is leaner cut when compared to the Ribeye, but it’s still extremely tender and juicy.
