Nicknamed the butcher’s cut, as it was often kept back for its exceptional flavour, bavette is prized for its pronounced grain and rich, beefy character. This cut offers an excellent balance of lean muscle and surface fat, and its unique texture delivers outstanding results when cooked quickly as a steak or roasted whole and sliced. Taken from the sirloin flap, bavette has a loose, open grain similar to onglet, making it highly versatile and especially rewarding when sliced correctly against the grain.
