This halal wagyu brisket draws on the unmatched flavour profile of wagyu beef, with the distinctive attributes of the shorthorn breed. We used the extensive knowledge of our Irish farming partners alongside our own expertise to produce our most unique offering to date, Tom Hixson’s own range of Wagyu beef.

This exclusive offering has been created through a specific wagyu / shorthorn cross to create a perfectly marbled beef. We then supplement their diet with chocolate throughout their last 3 months to add sweetness to the bite.

Experience a culinary delight with a whole beef Brisket, sourced from the lower back or chest. Comprising of two distinct muscles, the point and the flat, the untrimmed or "packer" cut combines both sections of the Brisket for the best experience. 

This cut is a popular choice amongst the BBQ smoker’s community, as the brisket boasts a thick layer of fat that infuses the meat with an abundant flavour. This allows the fat from the marbling to render through the beef, creating an incredibly moist, tender, and flavourful piece of beef.
