FLANK STEAK

Nicknamed 'The Butcher's Cut' as they would often save this for themselves, the Bavette/Flank is known for it's distinctive grain and full flavour. This cut features the perfect ratio of muscle and fat, and it's unique texture allows for excellent results when cooked as a steak or even as a whole joint. It is cut from the flank of the cow, giving it a loose texture similar to the onglet and allows great versatility when cooking.
