Instructions

  1. Grab a medium sized glass bowl and mix together the olive oil, soy sauce, orange juice, lime juice, garlic, jalapeno, cumin powder, fresh coriander and 1 teaspoon pepper. Keep back 4 tablespoons of the marinade in the fridge to use at the end when serving.

  2. Either in a flat dish big enough for the steak or a sealy bag, add in all of the remaining marinade and the bavette steak. Try to marinate covered in the fridge for at least 4 hours but ideally leave overnight. Flip the steak every so often to make sure the marinade gets to all areas.

  3. Before you are ready to cook the steak, gather all the ingredients for the black bean salsa and combine in a large bowl.

  4. When ready to cook the steak drain and discard all the used marinade.

  5. Preheat your BBQ coals or grill to a medium high heat cooking direct. Pat the steak dry of any excess marinade and season to taste. Place the steak onto the grill directly above the heat and you are aiming for medium rare or whatever your preference.

  6. Flip the steak regularly to avoid burning but a little char is good. This should take anywhere between 3-6 minutes per side depending on the heat or your grill. 

  7. Rest the steak for a minimum of 5 minutes. While the steak is resting very quickly dip your tortillas in water then add to the grill for 10 seconds per side.

  8. Carefully look for the grain of the meat and make short and thin slices against the grain and pour over those last 4 tablespoons of the original marinade.

  9. Load up your tortilla with steak, sour cream, salsa, guacamole or whatever is your preference and enjoy your tasty carne asada tacos.
