With a marbling score of 9+, this rump heart delivers an exceptional balance of bold flavour and refined texture. The marbling is intricate and consistent, gently rendering during cooking to enhance the natural depth and richness of the beef. Firm and structured by nature, this cut retains Wagyu’s signature succulence when cooked with care — ideal for reverse-searing or slicing finely after grilling to showcase its full complexity.

Cut from the centre of the rump, the rump heart is a highly regarded, flavour-driven cut with excellent consistency and shape. This example is sourced from Fullblood Japanese Wagyu cattle, reared in Australia on a precise grain-fed programme designed to encourage optimal marbling and maturity. With pure Japanese lineage and produced in extremely limited volumes, it reflects the careful craftsmanship of specialist producers. Tom Hixson of Smithfield is proud to be the only UK supplier of this exclusive offering.

The Rump Heart is located from the top section of the hindquarter of the cow between the sirloin and the topside. The Rump Heart is leaner compared to the fillet steak or ribeye but packs an abundance of succulent flavours. A low and slow cooking method is more suitable for this cut to help release its flavours.
