The Belgium countryside has long been known for its careful, traditional approach to pork — and these Pork St Louis Ribs are a fine example of that heritage. Cut from the belly side of the rib cage, the St Louis rib is neatly trimmed to create an even, rectangular rack that cooks beautifully and carves with ease. This is a butcher’s cut: balanced, substantial, and prepared to showcase the natural quality of well-reared European pork.
What makes the St Louis rib so rewarding is the harmony between meat, fat and bone. There’s generous marbling running through each rib, which slowly renders as it cooks, basting the meat from within. When treated with patience — whether smoked low and slow, roasted gently, or finished over charcoal — the result is tender but with just enough bite, and a deep, savoury sweetness that only proper pork delivers. A simple dry rub and time are often all that’s required; the meat does the rest.
