INTERCOSTAL

Intercostal, more commonly known as Rib Fingers, is a unique cut taken from between the individual ribs of the carcass. Unlike traditional rib cuts, this meat is carefully trimmed from the narrow strips that sit between each rib bone, making it both distinctive and highly sought after.

What makes Intercostal special is its naturally high level of marbling and open grain, which give it a bold, beef-forward flavour and a tender yet pleasantly chewy texture. When cooked, the marbling renders down beautifully, creating a balance of crisp, caramelised edges and juicy succulence within.

Versatile and full of character, Rib Fingers are particularly well-suited to grilling, braising, or slow-cooking in marinades, where they absorb flavour effortlessly and deliver a truly satisfying eating experience
