Taken from the hindquarter, the topside is naturally lean yet refined, and is available exclusively through Tom Hixson of Smithfield- a reflection of our dedication to sourcing only the finest beef.

TOPSIDE

The Topside is taken from the hindquarter of the cattle, between the rump and leg. The topside joint is lean and tender, which makes an excellent roasting joint. A slow cook really helps these flavours develop within the meat.
