Ingredients
Argentine Flank Steak
1 tbsp salt
2 tbsp brown sugar
2 tbsp paprika
1 tbsp cumin
1 tsp each: oregano, cinnamon
2 red onions, thinly sliced
6 garlic cloves, crushed
3 tbsp chipotle chilli paste
3 tbsp tomato purée
½ bunch fresh coriander (stalks & leaves separated)
400g passata
250ml hot water mixed with 1 tsp coffee
400g fresh pasta

Packed with warming spices, subtle sweetness, and a touch of heat, this dish delivers big flavour with every bite. The secret? A bold, chipotle-infused sauce that simmers away for hours, creating fall-apart beef that's perfect for tossing with fresh pasta.

Whether you're cooking for a cosy night in or impressing guests, this dish guarantees comfort and indulgence—without the hassle. Simply season, slow-roast, shred, and enjoy!

 

Method

1. Prepare the Base
    - Spread the sliced red onions in an ovenproof dish.

 2. Season the Beef
    - Coat the steak with salt, brown sugar, paprika, cumin, oregano, and cinnamon, then place it on top of the onions.
    - Scatter over the garlic cloves and coriander stalks.

 3. Make the Sauce & Cook
    - Whisk together the chipotle paste, tomato purée, passata, and coffee mixture, then pour over the beef.
    - Cover with a lid and slow-roast at 180°C for 3 hours until the beef is tender and easily shredded.

 4. Assemble the Dish
    - Cook the fresh pasta according to the package instructions.
        Lightly shred the beef, then toss it with the pasta, some reserved pasta water, and black pepper to create a rich, silky sauce.
    - Garnish with coriander leaves and serve.
