Method
1. Prepare the Base
- Spread the sliced red onions in an ovenproof dish.
2. Season the Beef
- Coat the steak with salt, brown sugar, paprika, cumin, oregano, and cinnamon, then place it on top of the onions.
- Scatter over the garlic cloves and coriander stalks.
3. Make the Sauce & Cook
- Whisk together the chipotle paste, tomato purée, passata, and coffee mixture, then pour over the beef.
- Cover with a lid and slow-roast at 180°C for 3 hours until the beef is tender and easily shredded.
4. Assemble the Dish
- Cook the fresh pasta according to the package instructions.
Lightly shred the beef, then toss it with the pasta, some reserved pasta water, and black pepper to create a rich, silky sauce.
- Garnish with coriander leaves and serve.
