Whether you’re watching your calories or looking to up your protein intake, this warming winter dish is the perfect pick me up for these cold, dark days. Great for either a lunch option or serve with a crusty wholemeal roll for dinner.

Start by dicing your chicken into large chunks.

Add 1 tbsp of oil to a pan and fry your chicken on a medium heat until thoroughly cooked.

Once the chicken is cooked. Remove from the pan and shred using two forks. Put to one side.

In another larger pan, heat 1 tbsp of oil and add your onion and garlic and fry until the onions are golden brown.

Prepare your chosen veg. If using carrot, mushroom or celery, try and chop into even sized chunks.

Add boiling water to your stock and pour into the pan along with your vegetables.

Once boiled, leave to simmer for around 10 to 15 minutes.

Add the diced chicken with some salt and pepper and stir.
