Best enjoyed grilled or seared quickly over high heat, it is perfect for slicing across the grain to showcase both its texture and flavour.

Sourced from Stone Axe’s Japanese Black Cattle, raised in Australia’s pristine cattle country, this cut is the result of careful rearing and a meticulous grain-finishing process. The flank is prized for its robust flavour and versatility in both traditional and contemporary dishes, and is available exclusively through Tom Hixson of Smithfield- a reflection of our commitment to sourcing only the finest beef.

Nicknamed 'The Butcher's Cut' as they would often save this for themselves, the Bavette/Flank is known for it's distinctive grain and full flavour. This cut features the perfect ratio of muscle and fat, and it's unique texture allows for excellent results when cooked as a steak or even as a whole joint. It is cut from the flank of the cow, giving it a loose texture similar to the onglet and allows great versatility when cooking.
