With a marbling score of 6–7, the intramuscular fat is generous yet refined — melting gradually during cooking to deliver a rich, savoury flavour without overwhelming the natural character of the beef. The texture is firm yet yielding, giving just enough bite to satisfy while retaining Wagyu’s signature softness. Best cooked over high heat — whether grilled or pan-seared — to allow the fat to caramelise and bring out its layered complexity.
Cut from the short loin, this sirloin is taken from Fullblood Wagyu cattle — a pure Japanese breed, raised on open Australian pastures and finished on a carefully managed grain-fed diet. Known for its balance of tenderness and structure, the sirloin is a classic cut that offers both depth and versatility. With direct lineage to Japan’s most revered Wagyu bloodlines and produced in extremely limited volumes, this is a rare example of craftsmanship and provenance combined.
