The Pluma’s feather-shaped profile is beautifully marbled, offering a perfect balance of lean meat and intramuscular fat. As it cooks, the marbling gently renders, infusing the cut with succulence and a delicate sweetness. The texture is soft and refined, making it well suited to quick, high-heat cooking - simply seasoned and seared on the grill or pan to medium-rare, allowing its natural depth of flavour to shine.
A cut of true distinction, the Pluma is taken from the end of the loin near the shoulder of the renowned Iberico pig. Native to Spain and raised in the traditional dehesa woodlands, these pigs roam freely and forage on a rare diet of acorns and grasses. This unique lifestyle, coupled with centuries of careful husbandry, produces a cut that is both highly prized and deeply rooted in Spanish culinary heritage.
