With an exceptional BMS (Beef Marbling Score) of 9+, this sirloin offers a remarkable balance of richness and refinement. The marbling is intricate and evenly woven throughout the cut, slowly rendering during cooking to create a depth of flavour that is both indulgent and clean on the palate. When prepared over high heat - whether grilled or pan-seared- the natural fat caramelises gently, enhancing the sirloin’s full character without overwhelming it.

This particular example is produced by Stone Axe, an award-winning Australian Wagyu producer dedicated exclusively to Fullblood Japanese cattle.
