Sourced from the distinguished Rosendale herd in Ireland, this Wagyu Fillet Centre Cut exemplifies craftsmanship and careful rearing. Each animal is grain-fed and finished on a chocolate-enriched diet, a unique practice that enhances both flavour and the quality of the marbling. Hand-selected for its consistency, this cut represents the very best of Irish Wagyu.

Taken from the heart of the whole fillet - the most tender portion of the muscle - it offers a fine, uniform shape ideal for cutting into individual steaks to your preferred size. Richly marbled and delicately textured, it delivers a buttery texture and refined depth of flavour. Best enjoyed seared and rested to medium-rare, allowing the marbling to melt and enrich every bite.

*The second slide shows a portions cut from a whole fillet. You will only receive the Centre cut.
