This example comes from Ocean Beef cattle raised in New Zealand, where careful farming and a considered grain-fed finish bring consistency, balance, and depth to the meat. The bone remains intact not only as a nod to traditional butchery, but for the flavour it contributes during cooking, giving the cut its distinctive presence both in the kitchen and at the table.
The rib’s natural marbling lends the meat a rich, rounded flavour and a tender, supple texture. Cooked over high heat and finished more gently, the fat renders gradually while the bone helps carry warmth through the meat, building depth as it rests.
