Stone Axe Wagyu Short Ribs are the kind of indulgence that reward slow, deliberate cooking. Generously marbled and deeply savoury, they simply melt over hours of braising or smoking for a beautiful pull-apart beef. The depth of flavour comes from more than just the Wagyu genetics- it’s the result of high-welfare, low-stress farming and a climate that supports long, even growth. Expect meltingly soft beef and rich, glossy jus.
Stone Axe Wagyu produces premium ‘Full Blood’ Wagyu from carefully bred Japanese Black cattle, raised on high-altitude farms across New South Wales and Victoria. The cool climate, clean air, and natural pastures create the ideal low-stress environment for cattle to grow slowly and healthily, without the use of artificial growth hormones. This meticulous approach, paired with a carefully managed diet of locally grown feed, results in beef that is exceptionally tender, intensely marbled, and rich in flavour.
