Cut from the hindquarter, lamb chumps are often overlooked, but in truth they offer some of the most rewarding eating on the animal. These come from grass-fed lambs reared across the open landscapes of New Zealand, where a natural diet and steady growth produce meat with clarity and depth. Sitting between the loin and the leg, the chump carries the tenderness of the former with a little more character from the latter — a balance that makes it particularly versatile. With six pieces in each pack, they lend themselves equally well to cooking for a small gathering or preparing ahead with care.
When cooked properly, lamb chumps deliver a firm yet tender bite, with a fine layer of fat that bastes the meat as it renders. The flavour is fuller than a loin chop, but still clean and well-defined — a reflection of grass-fed rearing. They respond well to high heat: sear in a hot pan to develop a crust, then finish gently to retain their succulence. Resting is key here, allowing the juices to settle and the texture to soften just enough before serving.
