Cut from the loin, the striploin is one of the most elegant expressions of beef. This particular joint comes from Irish-reared cattle, where a temperate climate and rich pasture create the ideal conditions for slow, natural growth. With Wagyu influence in the breed, there’s a quiet assurance of quality here; a lineage known for its depth of marbling and refinement, brought together with the clarity and integrity of Irish farming.
What sets this striploin apart reveals itself in the pan and on the plate. Fine marbling runs through the meat, gently basting it as it cooks to deliver a texture that is both tender and composed. Roast it whole to a medium-rare, allowing it to rest well before carving, or cut into thick steaks for a more direct, flame-led approach.
This product is delivered frozen and may begin to thaw in transit. For best quality and safety, we do not recommend refreezing once defrosted.
