Wagyu Striploin Joint | Irish | Frozen 

Cut from the loin, the striploin is one of the most elegant expressions of beef. This particular joint comes from Irish-reared cattle, where a temperate climate and rich pasture create the ideal conditions for slow, natural growth. With Wagyu influence in the breed, there’s a quiet assurance of quality here; a lineage known for its depth of marbling and refinement, brought together with the clarity and integrity of Irish farming.

What sets this striploin apart reveals itself in the pan and on the plate. Fine marbling runs through the meat, gently basting it as it cooks to deliver a texture that is both tender and composed. The flavour is rounded and deeply savoury, with a subtle sweetness that lingers rather than overwhelms. Roast it whole to a medium-rare, allowing it to rest well before carving, or cut into thick steaks for a more direct, flame-led approach. 

This product is delivered frozen and may begin to thaw in transit. For best quality and safety, we do not recommend refreezing once defrosted.

The Sirloin is cut from the hindquarter and the lower portion of the animal's ribs, sitting just above the fillet. It is leaner cut when compared to the Ribeye, but it’s still extremely tender and juicy. The Sirloin has a natural top fat covering that enhances succulence and releases intense flavours that are infused in the meat when cooked.
