Is a unique cut taken from between the individual ribs of the carcass. Unlike traditional rib cuts, this meat is carefully trimmed from the narrow strips that sit between each rib bone, making it both distinctive and highly sought after.

It is naturally high level of marbling and open grain, which give it a bold, beef-forward flavour and a tender yet pleasantly chewy texture.
