Cut from the end of the rump, the Stone Axe Wagyu Rump Tail offers a perfect balance between robust flavour and refined tenderness. This triangular cut benefits from the intense marbling typical of Full Blood Wagyu, making it equally suited to hot-and-fast grilling or slower roasting. A versatile cut, prized for its texture and beefy character- elevated here by thoughtful breeding and exceptional pasture conditions.

Stone Axe Wagyu produces premium ‘Full Blood’ Wagyu from carefully bred Japanese Black cattle, raised on high-altitude farms across New South Wales and Victoria. The cool climate, clean air, and natural pastures create the ideal low-stress environment for cattle to grow slowly and healthily, without the use of artificial growth hormones. This meticulous approach, paired with a carefully managed diet of locally grown feed, results in beef that is exceptionally tender, intensely marbled, and rich in flavour.
