This select breed of Aberdeen Angus cow has made it's name for providing rich flavours and a smooth texture. The fillet sits beneath the ribs, next to the backbone, and as the least worked muscle it is of optimum tenderness.

The fillet muscle is so tender because it’s the least working muscle, therefore making it incredibly soft.
